Just when you had finally decided on your favorite rum cake flavor, here come my Pineapple Mini Rum Cakes to change ALL of that! I take the same yummy rummy batter that I use in my Classic flavor and add a little more butter and some rich-tasting light brown sugar to my baking pan for a perfectly caramelized slice of pineapple.
